Does this Recipe have to be used for Mini Meatloaves?

No, this recipe does not need to be used for Mini Meatloaves. You can absolutely use this recipe for regular full-sized meatloaves. The only differences would be that it would take longer to bake in the oven and you would want to increase the temperature slightly. Instead of 30 minutes at 350°F it would need to bake for 60 minutes at 375°F, or until done. You would want to remove the loaf from the oven at the 40 minute mark to add the glaze, and then return it to the oven for the remaining 20 minutes or so.

How to Bake the Meatloaves

The 30-Minute Mini Meatloaves will need to bake uncovered in the oven for 30 minutes at 350°F. Remove them from the oven half way through (after 15 minutes) to add the glaze on top. Return them to the oven and bake for the remaining 15 minutes.
A regular full-sized loaf will need to bake uncovered for 60 minutes at 375°F, or until done. You would want to remove the loaf from the oven at the 40 minute mark to add the glaze, and then return it to the oven for the remaining 20 minutes or so.

Ingredients
  

  • lbs ground beef
  • 1 large egg
  • 1 onion chopped, sauteed
  • ¾ cup milk
  • cup bread crumbs panko
  • salt to taste
  • pepper to taste
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp parsley

Glaze

  • cup ketchup
  • 2 tbsp mustard
  • 2 tbsp brown sugar
  • ½ tsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions
 

  • Preheat oven to 350°F
  • In a large bowl combine beef, egg, sauteed onion, milk, bread crumbs (add as needed), seasonings and half of the glaze mixture.
  • Place meatloaf in mini loaf pan (fill ¾ full).
  • Bake for 15 minutes, then remove from oven and add the rest of the glaze on top.
  • Return loaf pan to oven and bake for another 15 minutes or until done. Enjoy!
