These soft and chewy old fashioned oatmeal cookies were born one day when I got a serious craving for cookies, but didn’t have the usual ingredients around; like chocolate chips or raisins. So I got thinking, why should that stop me from enjoying a delicious batch of cookies?! So I went old-school, and was not disappointed in the least bit. I have made these soft and chewy old fashioned oatmeal cookies repeatedly since, and they are always a hit. The flavors of butter, vanilla, cinnamon, and nutmeg come through and make for a true comfort-food experience. Quick tip: if you have pumpkin pie spice in your pantry, adding a teaspoon of it to this recipe (in addition) will not disappoint!

When making these old fashioned oatmeal cookies it is really important to vigorously beat the butter and sugars until fluffy. This step is key in getting the texture of the cookies just right (chewy in the middle and crispy on the edges).

Ingredients
  

  • 1 cup butter softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 2/3 cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cup quick cooking oats

Instructions
 

  • Preheat oven to 350°F. Line 2 large baking sheets with parchment paper.
  • In a large bowl vigorously beat the butter and sugars until fluffy (an electric mixer would be handy). Beat in egg and vanilla. In a separate bowl combine flour, cinnamon, baking soda, salt, baking powder and nutmeg. Add to butter mixture, and then gently stir in oats.
  • Roll the cookies into balls (about 2 tbsp each). Place them on to prepared baking sheets. Flatten the dough balls with the back side of the spoon and sprinkle with sugar (optional).
  • Bake in the oven for 8-10 minutes or until done. They should be lightly golden brown on the bottoms. The cookies will be extremely soft; let them cool and solidify before transferring to a cooling rack.

Tips

  • The cookies will look unbaked in the centers when you take them out. As long as the bottoms are browned and the edges are golden brown, they are done and just need some time to cool!
  • You could add chocolate chips, raisins, nuts or any other additions you want.
  • 2 teaspoons of vanilla is not necessary, 1 teaspoon would suffice. I just really like vanilla!
