What to make for dinner… What tooo make for dinnerrr… Sound familiar? Of course it does, it’s the daily question that plagues us all. But not to worry! Today I’ve taken care of it for you. This recipe for one pot pasta is the delicious, flavorful, weekday dinner savior you’ve been waiting for–and when I say one-pan pasta, I really mean it. You don’t even need to boil water, so forget about an extra pot and a strainer.
I believe this concept originated from Martha Stewart back in 2013, and has since been replicated and adapted in endless ways. If you’re intrigued, then read on because I’m sharing my version of this dinner hack with you all.
*Disclaimer* I am aware this is not authentic Italian pasta–I am Italian myself. This is Simply an easy week night dinner that is delicious and can be easily paired with any kind of protein or sides you are feeling.

Substitutions
I always say to make a recipe your own–but if you are looking for some ideas, I will provide some below:
- You can use any pasta you want to, just read the package and adjust the cooking time as necessary
- You can use fresh herbs (Martha Stewart’s recipe uses fresh herbs)
- Instead of fresh garlic you can substitute it for garlic powder
- Instead of spinach you can use artichoke hearts (quarter them)
- Instead of cherry tomatoes you can use regular tomatoes, just cube them
Instructions for One Pot Pasta
- In a large pan combine uncooked pasta, chopped tomatoes; chopped spinach; sliced onion; spices and seasonings; olive oil and water. Bring to a boil over high-heat, add chicken bouillon, and stir and mix to combine with tongs. About 9 minutes for al dente, 11 minutes for well done. You may need to add a touch more water as you go until the noodles reach your desired tenderness.
- Remove from heat and adjust seasoning to taste. Garnish with parmesan and more oil if desired. Enjoy!
Recipe for One Pot Pasta
Ingredients
- 12 ounces pasta
- 12 ounces cherry tomatoes halved
- 1 onion medium sized
- 1 cup spinach chopped
- 2 cloves garlic minced
- 1 tsp basil dried
- 1 tsp parsley dried
- 1 tsp onion powder
- salt to taste
- pepper to taste
- sugar optional, to taste
- 2½ tbsp olive oil
- 4 cups water
- 1 tsp chicken bouillon
- parmesan for serving
Instructions
- In a large pan combine pasta, sliced cherry tomatoes; sliced spinach; sliced onion; spices and seasonings; and water. Bring to a boil over high-heat, stirring and mixing with tongs. About 9 minutes for al dente, 11 minutes for well done (may need to add a touch more water).
- Adjust seasoning to taste, and garnish with parmesan and more oil if desired. Enjoy!
