These easy homemade old-fashioned pancakes concluded the hunt I’ve been on for as long as I can remember, for the perfect pancake recipe. Even when I thought I had found it, they wouldn’t always turn out the same every time. Some times they would have that dreaded bitter baking soda flavor. Or they wouldn’t rise enough, and who wants a flat, bitter pancake?! Or even worse… a dry, flat, bitter pancake. Yuck. Talk about a day-ruin-er! Then I figured out the secret to make great pancakes, every time! Read on to find out why these easy homemade old-fashioned pancakes really are the best!

The Secret

The secret to great pancakes is adding brown sugar. Yup, you read that right. Adding brown sugar to your pancakes not only makes them sweeter, avoiding any bitter taste from the baking powder, but it also retains moisture in your pancakes, and the acidity in it reacts with the baking powder to help with leavening, resulting in fluffier pancakes. It truly is the secret ingredient in these easy homemade old-fashioned pancakes.

Substitutions

Egg: You can make this recipe vegan-friendly by using a flax seed egg, and dairy-free milk
Milk: You can use any milk you like

Additions

Fruit: If you would like to add fruit, toss it with flour before adding at the end. This will help it to not float to the bottom, and will also help it to not water down the batter while it release moisture (especially important if adding frozen fruit).
Chocolate Chips: Chocolate chips are a great addition! Add them at the end.

Equipment

  • bowl
  • spoon
  • whisk
  • frying pan or griddle

Ingredients
  

  • cups flour all-purpose
  • teaspoon baking powder
  • 1 teaspoon salt
  • 2 tablespoon golden brown sugar packed
  • 1 tablespoon white sugar
  • cups milk (any milk)
  • 1 egg large
  • 3 tablespoon vegetable oil
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon to taste

Instructions
 

  • In a large bowl, combine flour, baking powder, salt, sugars, and cinnamon.
  • Make a well in the center and pour in the milk, egg, and oil. Whisk until smooth.
  • Heat a lightly oiled griddle or frying pan. To test if the pan is ready, flick water onto it. If the water sizzles and dances it is ready.
  • Using a half cup scoop, pour batter in pan/griddle. Flip pancakes when you see bubbles and the bottom is golden brown. Enjoy!

Notes

If you want to add fruit to pancakes, toss lightly with flour (especially is using frozen fruit).
